River Red Gum
This amazing local, raw honey from Heritage Hills Honey Co is cold-extracted, unprocessed and unpasteurised. This preserves the natural viatmins and enzymes and maintains the antioxidant, anti-viral, anti-fungal and anti-inflammatory properties for which raw honey is famous.
Native to the South-Western areas of Australia, the majestic River Red Gum Eucalyptus thrives along river banks and billabongs. Bees draw from it's blossoms, producing a dense rich golden honey with a subtle sharpness to tempt the discerning palate.
**when Red Gum is unavailable, honey is sourced locally from the Lancelin and Bindoon area and is a combination of Blackbutt and Banksia.

Wildflower
As Spring falls the vast and abundant West Australian landscape is set ablaze with the colourful blooms of more than 12,000 wildflowers, the largest collection on earth. As the sun warms the red sands of the mid-west the wildflowers gently emerge sweeping ever southward towards the wind swept granite peaks of the rugged Southern Ocean.
Tasting notes: delicate, sweet and rich with distinct floral undertones.

Real, raw honey crystallises. The crystallisation process is natural and spontaneous. Pure, raw and unheated honey has a natural tendency to crystallise over time with no effect on the honey other than color and texture. What's more, the crystallisation of honey actually preserves the flavor and quality characteristics of your honey. Many honey users prefer it in this state as it is easier to spread on bread or toast. Indeed, some raw honey recipes can be easier to make with partially or fully-crystallised honey —and, the taste is richer.
